| 1 | 5–6 lb. H-E-B Boneless Prime Rib Roast |
Directions
1. Heat oven to 350ºF. Remove netting and outside foil wrapper from package. Make slit in top of bag and pour juices into a large baking pan. Remove roast from the bag.
2. Place roast fat side up in pan with juices. Cover roast with foil, allowing a 2-inch space between top of roast and foil, creating a foil “tent.” Place roast in the oven and heat for 1 hour and 15 minutes for medium rare or 1 hour and 30 minutes for medium. A meat thermometer placed in the center of the roast is the most accurate way to check the internal temperature of the prime rib. Due to variations in ovens, heating time and/or temperature may require adjustment.
3. Remove roast from oven (do not uncover) and allow to sit for 20 minutes.
4. Remove foil. Place prime rib on a clean cutting board, fat side up. With a carving fork to secure roast and a sharp carving knife, slice the meat. Pour strained and heated natural juices into a gravy dish for ladling over roast. Serve immediately.

Creamy Horseradish Sauce
Ingredients
| 1 package (8 oz.) | H-E-B Fat-Free or Regular Cream Cheese, softened |
| ½ cup | prepared horseradish |
| ¼ cup | fat-free or regular mayonnaise |
| ¼ cup | H-E-B Dijon Mustard |
Directions
1. Combine all ingredients in a food processor bowl. Process for 30 seconds to a creamy texture.
2. Serve as topping or accompaniment to the prime rib.
