Mama's Potato Salad

Ingredients

6 medium White Potatoes, boiled, peeled and cubed
6 HEB Eggs
1 cup each: HEB Ready Fresh Go Chopped Red Onions & Celery
½ cup chopped Hill Country Fare Dill Pickle
1 cup chopped HEB Ready Fresh Go Chopped Three Color Peppers
3/4 cup HEB Mayonnaise

Directions

1. Place 6 medium size potatoes into a large pot.  Fill pot with enough water to cover one inch over potatoes.  Bring water and potatoes to a boil over high heat and cook for 20 minutes.  Add the eggs in their shells to the potatoes and continue to boil the potatoes for 10 minutes or until potatoes are fork tender.  Drain, rinse and peel potatoes and eggs.  Cube the potatoes and chop the eggs.

2. Combine the cubed potatoes, chopped eggs, onion, celery, pickle, three color peppers and mayonnaise in a large bowl.  Toss to coat.  Season the potato salad to taste with salt and pepper. Cover the potato salad with plastic wrap and chill for 30 minutes or more.
 
Makes: 12 servings
Note: You can also add 1 to 2 Tablespoons YELLOW or STONE GROUND MUSTARD to the potato salad for extra flavor.
