Healthy Pizza Crust

Ingredients

¾ cup each: HEB Whole Wheat Flour and H-E-B Bread Flour
¼ cup Hill Country Fare Cornmeal
¾ teaspoon salt
1 packet bread machine instant yeast
1 tablespoon H-E-B Extra Virgin Olive Oil
1¼ cups room-temperature water (65º to 70ºF)

Directions

1. Combine all ingredients in large bowl. Mix ingredients by hand into a ball and place dough on a floured surface. Knead dough for 12 to 15 minutes by hand or use a heavy-duty mixer with a dough hook and mix on low speed for 5 minutes. Dough should be soft and pliable.

2. Spray a clean bowl with nonstick cooking spray and place dough in bowl, spray top of dough with cooking spray, cover with plastic wrap, and allow to rise for about 90 minutes or until double in size.

3. Divide dough into 6 pieces. Gently shape each piece into a ball and fl atten into a disk. Cover dough with plastic wrap and allow it to rest for 20 minutes, or refrigerate it for up to 2 days.

4. Heat oven to 450ºF. Place each piece of dough on an olive oil–sprayed sheet. Oil your hands and spread dough out with palms into a 10- to 12-inch crust. Now you are ready to add your pizza ingredients.

Heat oven to 450ºF. Bake tortillas directly on oven rack for 4 to 5 minutes or until golden and crisp. Cool before adding toppings. Cut each prepared pizza in half for 1 serving. (Makes 6 servings).
