Healthy Breakfast Tacos

8 H-E-B Low Carb Tortillas
1 cup Hill Country Fare Real Egg
1 cup HEB Ready Fresh Go Pico De Gallo, any flavor
¼ cup HEB Shredded Monterey Jack Cheese

Directions

1. Heat the tortillas, wrap in foil to keep warm and set aside.

2. Heat a large skillet over medium heat for 3 minutes.  Spray the skillet with non-stick cooking spray and add the egg and pico de gallo.  Allow the egg mixture to start setting and then stir with a spatula until eggs are cooked through, about 2 minutes.  Season to taste with salt and pepper.

3. Fill each tortilla with 1/3 cup scrambled egg mixture and top with ½ Tablespoon shredded cheese.  Wrap tacos in foil sheets to keep warm.  These are great for a grab and go breakfast.

Makes:  8 breakfast tacos
